英语. An improvement of the gas chromatographic method by Muntoni for the determination of the number of eggs used in the production of egg-containing pasta is described. The method uses HRGC or HPLC to evaluate the ratio cholesterol/beta-sitosterol, is relatively accurate and, above all, quite fast as the amount of sterols is determined directly from the fatty material previously transesterified

La metodica proposta prevede la valutazione, a mezzo HRGC o HPLC, del rapporto colesterolo/beta-sitosterolo ed e' caratterizzata da un'accettabile accuratezza e, soprattutto, da un contenuto tempo di analisi in quanto gli steroli sono determinati direttamente sulla sostanza grassa, previa sua transesterificazione
