Pumpkin is an important source of carotenoids with provitamin A activity, lutein, zeaxanthin, lycopene, dietary fibre, minerals and phenolic compounds with beneficial actions on the human organism. The use of pumpkin as a component of food products increases the nutritional value of the finished product. In this paper data are presented on the determination of β-carotene, zeaxanthin and lycopene in pumpkin subjected to different heat treatments by UV/Visible spectrophotometry.
