Abstract: The importance of the relationship between nutrition, nervous function and mental development is recognized in a collection of symposium papers of value to nutrition researchers. Many investigations demonstrate the deleterious effects of early malnutrition on the developing brain, with permanent alterations on behavior, perception and emotional status. The cause of these effects is open to several interpretations of which biochemical changes, separated from other environmental influences, are responsible. The relation between deficient intakes of specific nutrients and the nervous system is reviewed. The role of animal models as research tools in the study of human neurophysiological problems due to undernutrition is discussed. Other topics describe correlations between nutritional state and nervous excitation, neuronal growth, food behavior, hypothalamic regulation of appetite, weight control in the obese, and spontaneous activity.
