Innovative separation process finding its way into the food industry

A technological process is described, using carbon dioxide in its supercritical state to selectively extract and fractionate desirable components from a food mixture in 1 step. The basic supercritical process is illustrated schematically and discussed. Various supercritical processing applications (e.g., the production of supercritically decaffeinated tea) are described. The energy savings of supercritical fluid extraction for the food industry are cited.(wz)
