Aspects of genetic engineering as applied to brewing yeasts and related yeast strains in the fermentation industry are reviewed and summarized. Topics include carbohydrate utilization; the spheroplast fusion technique for the genetic manipulation of industrial antibiotic-producing Streptomyces (and other) strains for producing ethanol from corn mesh or glucose media; application of the technique of DNA transformation to yeast transformation; and transformation yield enhancement using liposomes. Industrial applications are discussed also. (wz)
