Present knowledge of the role in human nutrition of the lactose, vitamins and minerals of milk is summarized. Effects of processing on lactose and vitamin content are specified. Utilization of lactose from milk by-products is discussed. Tables present data relative to: (1) percentage contribution of dairy products to nutrient intakes in the United Kingdom in 1976; (2) contribution of milk to recommended daily nutrient intakes of a 5-7 year-old child; and, (3) concentrations of vitamins and inorganic nutrients in cows and human milk.
