EN KVANTITATIV STUDIE AV LIVSMEDELSVAL MED FOKUS PÅ FETTKVALITET VID LCHF | A quantitative study of food items focusing on fat quality during LCHF

Bakgrund. Befintlig forskning som studerat LCHF (Low Carb High Fat) har huvudsakligen undersökt hur dieten påverkar individers hälsa. Det saknas studier på hur LCHF ser ut i praktiken och i synnerhet i Sverige.  Syfte. Syftet med studien var att undersöka vilka livsmedel med fokus på fettkvalitet, som används av utövare av dieten LCHF samt undersöka skillnader mellan olika grupper.  Metod. Studien genomfördes med en webbenkät som postades i facebook-gruppen “LCHF-gruppen”. Antalet deltagare var 108. Inklusionskriterier för deltagande var minst 18 års ålder och att man hade ätit LCHF-kost i minst 3 månader. Som signifikansnivå valdes p<0,05. Vid jämförelser av grupper användes Chi-två test och Mann-Whitney U test. Resultat. Av de mest frekvent konsumerade livsmedlen innehöll de flesta livsmedel övervägande mättat fett, som exempelvis smör, grädde och ost med fetthalt 26-35%, men där fanns också livsmedel med större andel omättat fett. Män konsumerar mer rött kött än kvinnor, medan kvinnor konsumerar mer nötter och frön än män. De yngre deltagarna åt mer av vegetariska alternativ till animaliska livsmedel jämfört med de äldre. Ister, talg och späck konsumerades mer av gruppen som ätit enligt LCHF > 2 år, medan matolja, fet fisk och grädde konsumerades mer av gruppen som ätit enligt LCHF ≤ 2 år.  Slutsats. Resultaten bekräftar delvis stereotypen att en LCHF-kost innehåller mycket mättat fett. En del av de livsmedel som konsumerades hade dock en högre andel omättat fett. Vår studie visade att livsmedsvalen vid LCHF-kost kan variera en del mellan personer.

Background. Existing research about LCHF has primarily investigated how the diet affects the health of individuals. There is a lack of studies investigating how the LCHF diet looks like in real world conditions, especially in Sweden. Objective. The objective of this study was to investigate which food sources of fat are used by followers of LCHF and to examine differences between groups.  Method. The study was conducted using an online form which was posted in the facebook group “LCHF-gruppen”. The number of participants was 108. In order to meet the inclusion criteria of the study the participant had to be at least 18 years old and have been eating an LCHF-diet for at least three months. The level of significance chosen was p<0,05. To make comparisons between groups the chi-square test and the Mann - Whitney U test was used.  Results. Among the most frequently used food items most were high in saturated fat such as butter, cream and cheese 26-35%. However, some of these food items contained predominantly unsaturated fats. Men consumed more red meat than women did. Women consumed more nuts and seeds than men. The younger age-group of participants consumed more plant-based alternatives to animal protein in comparison to the older age-group. The group who had been eating accordingly to LCHF > 2 years had a higher consumption of grease and lard than did the group of LCHF ≤ 2 years, which had a higher consumption of cream, fatty fish and cooking oil.  Conclusion. The results partially confirm the stereotype which states that a LCHF-diet contains a high amount of saturated fats, however there were also food items consumed which had a higher proportion of unsaturated fats. Our study showed that the food items included in a LCHF-diet can vary from person to person.
