Optimización mediante la simplificación de ingredientes | Optimization by simplifying ingredients

En el presente trabajo abordaremos una problemática común a varias cervecerías que, en su crecimiento, buscan optimizar sus procesos sin afectar la calidad de las cervezas. Se propondrá conseguirlo simplificando ingredientes, mediante la combinación de ellos y con la utilización de diferentes técnicas ya probadas. Como resultado se presentarán a modo de ejemplo algunas recetas y técnicas, pero que a su vez pueden ser utilizadas para conseguir otros estilos y recetas. Se concluye en que es posible impactar positivamente, directa e indirectamente, incluso en los costos mediante la simplificación de ingredientes y dejando abierto el debate de hasta dónde se pueden reducir para conseguir el equilibrio costo-calidad aceptado por los clientes.

In the present work we will address a problem common to several breweries that in their growth seek to optimize their processes without affecting the quality of their beers. It will be proposed to achieve this by simplifying ingredients, by combining them and with the use of different techniques already tested. As a result, some recipes and techniques will be presented as an example, but that in turn they can be used to get other styles and recipes. Concluding that it is possible to positively impact, directly and indirectly, even in costs by simplifying ingredients and leaving open the debate on to what extent they can be reduced to achieve the cost-quality balance accepted by customers.
