Changes in quality of parents stock hens meat during chilled storage

The aim was to study changes of chemical composition (fat content, protein content), pH and colour of poultry meat during chilled storage. Various criteria are used for evaluation of bird and carcass quality, while the combination of several indices determines the quality of poultry meat, which has an important role in the following meat processing and quality of end product. Chilled poultry meat is offered in retail and it is used in processing plants for various meat products production. Chemical composition (fat content, protein content), pH and colour are important quality determinants. Hens' meat is cheaper compared to broiler meat; therefore its use in processing is profitable. Parents stock hens of the cross Ross 308 were used for the study. Parent stock hens were fed compound feed. After chilling a hen fillet [musculus pectoralis], hen thighs [musculus biceps] and hen drumsticks [musculus gastrocnemius; musculus fibularis longus] were separated from carcasses. The obtained products were refrigerated at temperature +1+-0.5 deg C. The analyses were performed 1 day after slaughter and on the 5th day of storage. The following parameters were analysed: pH value (3510pH Meter - JENWAY); total protein content (LVS ISO 937:1978); fat content (LVS ISO 1443:1973); colour changes (Color Tec-PCM; software ColorSoft QCW for colour data analysis). The analysed parameters significantly differ in 'white' and 'red' poultry meat, and in various cuts of 'red' meat.

Jerusalem artichoke powder (JAP) from Jerusalem artichoke (Helianthus tuberous L.) roots is a nutritive valuable product that can be used for a healthy product development. The influence of JAP on the quality and degree of liking of cakes was investigated. Sensory evaluation of cakes was realized in two stages: the first - to define the quality attributes of the cakes with JAP from the point of view of the experts, the second – to find out the consumers' views on the cakes, whose quality has been improved in accordance with the recommendations of the experts. As a control sample, the classic home cake was evaluated. Control sample was compared with the cakes, where the amount of wheat flour prescribed by recipe was partly substituted with JAP at different concentrations. Experts evaluated cakes and defined the highest acceptable concentrations of JAP in cakes. For the consumers it was offered to assess the cakes with JAP at concentration 30% and with different taste and aroma enhancers. Cakes with 30% of JAP additive were the most favoured by the sensory properties: aroma, texture, softness elasticity, porosity and softness, surface crust, appearance, colour, shape, and size. Results of analysis of variance showed that there no significant differences in the degree of liking between the cakes with JAP and the cakes with taste and aroma enhancer additives (p is greater than 0.05). There had been performed hardness analysis and colour measurement for cakes with JAP. The observed results declare high influence of aroma and taste enhancer on cakes structure and colour.

The pears (Pyrus communis) are one of most popular fruits that consumers willingly use as fresh produce. On the market place, consumer mainly pays attention to per's externals, size, colour, as well as to fruit taste, substantially influenced by degree of readiness, which in its turn has affect on the chemical composition of pears. The physical, chemical and sensory indices are significant when fruits have been used for fresh-cut fruit salad preparation. All tests have been carried out at Latvia State Institute of Fruit Growing, Dobele in year 2009-2010. The objective of this study was to evaluate the physical, chemical and organoleptical properties of winter cultivars of pears grown in Latvia. The object of the research was 13 cultivars of pears: 'Delta', 'Latgale', 'Tayushchaya', 'Talgarskaya', 'BP 8965', 'Elektra', 'Janvarskaya', 'Beta', 'Bere Kiyevskaya', 'Eckehard', 'Belorusskaya Pozdnaya', 'Erika', and 'Conference' and as a control commercial cultivar. The pears were analysed and their parameters were measured: average mass and diameter of fruits, flesh firmness, colour of flesh, titratable acid (TA) and soluble solids content (SSC) were determined. Sensory analyses were carried out by 9-point hedonic line scale method. Soluble solids content (degree Brix) of pear fruits grown in Latvia is within 9.6 - 14.5 degree Brix. The titratable acidity (TA) is insignificant (0.05-0.26%). The average mean mass of one fruit depending on a cultivar, is 174 g, the flesh firmness at the maturity stage is on average 10.7 to 26.5N. The fruits of cultivars 'Tayushchaya', 'Elktra', and 'Bere kiyevskaya' by their sensory indices were evaluated as the best.

Thermal wood modification has been intensively studied in the recent decades because of the possibility to produce wood with improved biodurability and dimensional stability without use of harmful chemicals. Beside altered physical characteristics, wood colour is changed to lighter or darker brown as a result of thermal treatment. Growth of interest in thermal wood treatment has stimulated numerous researches concerned with discoloration of thermally modified wood which is subjected to light exposure. The objective of this study was to evaluate the colour stability of thermally modified hardwood during storage in the dark where wood discolouration is not photoinduced but rather a result of oxidative ageing. Three thermally modified hardwood species – aspen (Populus tremula L.), alder (Alnus incana Moench), birch (Betula pendula Roth.), where investigated. Wood discoloration was monitored by spectrophotometrical measurements of reflectance spectra and chromaticity parameter calculations using CIELAB colour system where L* is the lightness, and a* and b* are the chromatic coordinates. The colour stability of thermally modified wood as well as of untreated wood of the same species was examined by means of assessment of the colour parameter changes (ΔL*, Δa*, Δb*, ΔEab). All wood specimens under study discoloured during the experiment, but the colour change did not exceed two units that are common and accepted for wood products. Untreated and thermally modified wood showed different trends of discoloration during storage in the dark. The final colour changes that were fixed at the end of the experiment were greater for the thermally treated wood.

Cereal and whole grain products are an important source of dietary fiber in the human diet. Since the milling process highly influences the proportions of the different cell types in the bran, it is expected that brans originating from different genetic/agricultural backgrounds and produced by different processes have different chemical composition. Wheat (Triticum aestivum) bran has not been studied in Latvia, therefore the aim of the present study was to analyze physical – chemical characteristics of wheat bran from Latvia’s industrial mills. Four bran samples were collected from two industrial mills: Stock Company ‘Dobeles dzirnavnieks’ and SC ‘Rigas dzirnavnieks’. All experiments were performed at the Food Technology of Latvia University of Agriculture in May 2011-February 2012. The particle size distribution of the bran samples was determined by sieving. The content of titratable acidity (TA) was detected by titration with 0.1 M NaOH till pH 8.5 was stable for 1 minute. Wheat bran colour was analysed by Hunter Lab colour measurement instrument using ColorTec colorimeter PCM/PSM in CIE L * a * b* system. Moisture content was analyzed using standard ICC 110/1 method by sample drying for 2 h at 150 °C. Results showed that there were significant differences between varieties (p0.05) for titratable acidity and for particle size, but no significant differences (p0.05) were found between the varieties in moisture, pH and colour. TA varied from 6.40±0.71 to 12.05±0.21°, moisture content- from 10.01±0.51% to 11.61±0.47%, pH–from 6.31±0.61 to 6.80±0.05, but colour of bran between the samples did not significantly differ.

The main purpose of the present experiments was to investigate the effect of various hydrogen peroxide (H2O2) concentrations and for various lengths of treatment on the total carotenoid, β–carotene content, colour intensity and microbiological safety on the fresh shredded carrots. Shredded carrots were dipped in 0.5, 1.0 and 1.5% H2 O2 water solution for 30 ± 1s, 60 ± 1s and 90 ± 1s. Negative effect of H2 O2 on β–carotene content and colour parameters of analyzed shredded carrots samples was not detected. In carrots treated with H2 O2 (p = 0.008) for 60 – 90s the total content of carotenoids significantly decreased during treatment compared to untreated carrot samples. There was significant difference (p is less than 0.05) observed between treated and non–treated shredded carrot samples on the total bacteria count. It was possible to reduce significantly (p is less than 0.05) the content of yeasts and mould up to 99.99% by shredded carrots treatment with 1.5% hydrogen peroxide water solution for 30 ± 1s. In the non–processed carrots E.coli was detected; however, it was possible to destroy E.coli by treating carrots with 0.5% H2 O2 water solution for 30 ± 1s. Considering all experimentally obtained results, we have concluded that fresh shredded carrots could be treated in water with the addition of hydrogen peroxide 1.5% for 30 ± 1s to maintain quality.

The rowanberries (Sorbus aucuparia L.) are small orange-red fruits of a rowan tree and belong to the family Rosaceae. These berries have been described as an important source of flavonoids, and their antioxidant activity affects reactive oxygen species and lipid peroxidation; therefore they are suitable for production of health-food products. The ripe wild rowanberries have traditionally been used for jellies and jams, but their use as a food ingredient has been less popular because of their bitter taste. Sweeter and less astringent than wild rowanberries are different cultivars of sweet rowanberries and hybrids with other species. The aim of the current research was to determine physical and chemical parameters and sensory properties of rowanberry marmalades. The experiments were carried out in the Faculty of Food Technology of Latvia University of Agriculture. The purees of wild rowanberry and six different rowanberry cultivars were chosen for the production of marmalades. Chemical, physical and sensory indices of the product – moisture, total carotenoids, tannins, colour, hardness and intensity of sensory properties (flavour, colour, bitterness) – were determined as quality indicators. The results showed large variability in the physical and chemical parameters between the marmalades of different rowanberry cultivars and hybrids. The sensory evaluation of marmalades from rowanberry cultivars ‘Moravica’, ‘Mitchurinskaya krasnaya’, ‘Sorbinka’ and hybrid of rowanberry × hawthorn ‘Granatnaya’ showed that the degree of liking was from “neither like nor dislike” to “like moderately”, and marmalades from wild rowanberry, S. aucuparia var. sibirica and hybrid of rowanberry × pear ‘Alaya Krupnaya’ – from “dislike moderately” to “dislike slightly”.

One of the causes of cardiovascular diseases and overweight problem is a high consumption of sweets. Sugar is traditional food sweet matter. A change of sugar may therefore both change the perception of texture of products. The aim of the research was to evaluate properties of agar-agar jellies prepared with Jerusalem artichoke (Helianthus tuberosus L.) syrup (JAS). Soluble dry matter of experimental samples was determined by Mettler Toledo Refracto, separated sugars - by liquid chromatography, and acidity of jellies - by titration with 0.1 M NaOH. The measurements of pH were made by pH-meter Jenway 3510. Determination of vitamins B1 and B2 was made by the AOAC Official Method 986.27 and 970.65. Texture of samples was determined by using a Texture Analyser (Model TA.XT Plus; Stable Micro Systems), by cylindrical probe (P/25). Colour of jellies was evaluated by using Colour Tec-PCM. The results showed that soluble dry matter decreased from 64.5˚ Brix to 57.5˚ Brix, sucrose decreased by 6%, the acidity increased from 7.2 to 17.8˚, and pH values ranged between 3.8 and 4.5. The hardness of the samples decreased from 50.66N to 40.05N by increasing of added JAS concentration. Adding JAS in jelly, the content of vitamins B1 and B2 increased. Lightness “L” fluctuated between 24.26 and 14.60 with increase JAS concentration. The research suggests that different percents of Jerusalem artichoke syrup could be used as sugar substitute. The product becomes healthier, but the gels obtain a darker colour. Therefore it is recommended to look for other version to improve the colour of experimental jellies.

Colour, texture and aroma are the main quality attributes of food influencing consumer acceptability of food products. Colour of the product is one of the factors affecting hedonic evaluation. Strawberry mass for a consumer is characteristic by its distinct red colour. The stability of anthocyanins becomes most significant in the case of colour quality. To investigate colour quality, it is necessary to measure colour, as well as pigment concentration. Fresh and thermally treated strawberry mass was analyzed. Formation and stability of anthocyanins, which is the main colour formation substance of berries, are determined by different factors. Anthocyanin colors can be enhanced and stabilized by the addition of different natural or artificial acidifiers. Data of the research indicate that anthocyanin amount during storage period decreases. After 2 days storage their amount increased, but afterwards decreased, both, in fresh and thermally treated mass. The taste evaluation of strawberry mass was essentially affected by the enhancers added. The aim of research was to analyze the quality parameter – colour of strawberry mass with added acidifier which further could be used in production of different products for the needs of public catering, e.g. in production of desserts. The anthocyanin content in strawberry mass with acidifiers was determined to see the organic acid impact to colour stability. Research shows, that natural enhancers – quince and sea buckthorn juices used in the research, did not substantially affect each other’s pH in the product.

There is growing interest in products without added sugar; thus, sugar consumption is directly related to diabetes and other illnesses such as obesity. A change in the type of sugar and content may therefore both change the perception of sweetness and texture of products. The aim of the research work was to evaluate properties of agar-agar jellies prepared with inulin syrup, galactose syrup and malt extract to replace sugar. Agar gels were prepared to substitute sugar with inulin syrup, galactose syrup and malt extract. Texture of experimental samples was determined by using a Texture Analyser (Model TA.XT Plus; Stable Micro Systems). Colour of jellies was evaluated by using Colour Tec-PCM and Jenway 3510 was used for pH measurements. Obtained results showed that different kinds of sugar containing syrups could be used as sugar substitute for production of a new type jellies. Hardness of the experimental samples is influenced by the sugar type containing syrup. The hardness is determined in the experimental samples by replacement of sugar by increasing concentration of inulin syrup. Decreasing hardness values are observed by increase of added malt extract (maltose) and galactose syrup concentration in samples. The pH values of experimental samples ranged between 3.11 and 4.45. Higher L* value of experimental samples are with galactose syrup. Lightness “L” changed between 20.92 and 18.11 increasing inulin syrup concentration. The same situation can be observed using malt extract as sugar substitute.
