Balık Tüketim Eğilimleri, Sinop İli Örneği

Çalışmada Türkiye ve Karadeniz Bölgesinin önemli balıkçılık yerlerinden olan Sinop il merkezinde balık tüketim tercihlerinin belirlenmesi amaçlanmıştır. Araştırmanın özelliği gereği iadesiz seçim gerçekleştirilmiştir. Araştırmanın birincil verilerini, anket yoluyla elde edilen veriler oluşturmuştur. Verilerin analizinde; betimletici istatistikler, ki-kare uyum testi ve regrasyon analizinden yararlanılmıştır. Araştırmada denek sayısını belirlemek için; n=Npqta2/[(N-1)d2+ pqta2] formülünden yararlanılmıştır Katılımcılardan %58’i balıketinin sağlıklı olduğunu belirtmiştir. En çok tükettikleri etin balıketi olduğunu belirtenlerin oranı sadece %21’dir. Deneklerin tamamına yakını (%94) balığı taze olarak tüketmeyi tercih etmektedir. Haftada en az bir kez balık tüketenlerin oranı sadece %2 iken, en yüksek oran (%48) on beş günde bir tüketimdedir. Deneklerin yarısına yakını (%45) balıketini ızgarada pişirerek tüketmeyi tercih etmektedir. Balıketi tüketenlerin %90’ı deniz balığını tercih ederken, %71’i balık satış yerlerinin bir arada olmasını istemektedirler. Ayrıca deneklerin %49’u balık sakladıklarını belirtmiş ve balık saklayanların %82’isi soğuk muhafaza, %16’sı tuzlama ile balık saklamayı tercih ettiklerini belirtmişlerdir. Soğuk muhafaza yoluyla balık saklayanların %74’ünün geliri 3000 TL ve üzeri gelir seviyesine sahiptir. Tuzlama yoluyla balık saklayanların her gelir grubuna dağılmış olması, yöredeki kadim kültürden kaynaklandığını söyleyebiliriz.

Fish is an important food source for human health. Despite being surrounded on three sides by seas, fish demand is not enough demand in Turkey. The demand for a good is determined by many factors, especially the income of consumer and price of an item. In Kastamonu city centre with a population of 128.537, a questionnaire is applied to determine the consumption and frequency of fish consumption. According to the survey results, the consumption of fish in Kastamonu city centre is not at a desirable level. Although the price of fish is lower than that of red meat, it is not preferred by the low-income group. Most fish consumption is carried out by those with high-income levels.

The aim of this study is to determine the consumption habits of aquatic products in Ardahan province and its districts. The study carried out between 2014 and 2015 was prepared face to face with the consumers by using a questionnaire prepared to measure the consumption habits of aquatic products. The research material consisted of data collected from 302 people by face to face survey method. When the demographic data were analysed according to the results of the study; 73.84% of the respondents were native to Ardahan and 26.15% were immigrants, 38.08% were female, 61.92% were male, the average age was 32.50 and the average monthly income was 1862.80 TL. According to the findings of the study, per capita annual fish consumption is 39 kg and per capita monthly fish consumption is 3.25 kg. The most preferred species of freshwater fish was trout (75.22%), while anchovy was found in marine fish (48.57%). While 21.98% of the participants consume fish, 18.73% chicken, 17.62% veal, 13.52% goose, 13.34% sheep, 6.67% goat meat and 4.19% turkey meat, only 1.71% prefer aquatic species such as mussels and shrimps. The important reason why fish is preferred is being healthy with 45.03%. The other most consumed aquatic products is mussel with 11.92%. It was determined that 76.49% of the consumers did not consume aquatic products other than fish. As a result, it is determined that although there is no coastline of Ardahan and the socio-economic level of the people is not high, the consumption of fish is high. The people of the region who deal with cattle as a source of livelihood prefer to consume aquatic products. In this respect, Ardahan is at the level that can be an example to Turkey.

This study aimed to investigate the fish consumption in Giresun by survey method. Fish meat was compared with other meat types according to education, level of income, consumption rate and quantity. In research carried out according to the random sampling method. Questions were asked face to face a total of 433 persons. A total 428 participants (98.9%) stated that they consumed fish. However, the most consumed meat type is chicken, second is fish. A total 91% participant preferred marine fish. The most consumed fish species is anchovy with 34%. Fish consumption per person in Giresun is above Turkey’s average with 12.34 kg/year.

In this study, it is aimed to reveal the place and importance of fish in nutrition by determining the fish consumption habits of Adiyaman University Kahta Vocational School students. The data were obtained from the questionnaire made with total 240 students in February 2020. The data were analyzed and interpreted by using rate and percentage methods as descriptive statistics. A total of 15 questions were asked to the students who participated in the research. In this study, it was determined that 70.42% of total students consume fish; the frequency of fish consumption was also determined as 34.34% once a month and 14.45% once a week. In the study, it was determined that the fish are preferred as the fried or grilled by students. In addition, it has been seen in the study that 84.05% of the students find that consuming fish is important for health, 36.54% of them do not have knowledge about the freshness criteria that should be considered while purchasing fish, 73.53% of them can easily reach fish and 94.41% of them do not consume water products other than fish. At the end of the study, it is concluded that the fish consumption rate and the frequency of consumption are not at the desired levels.
