Relationships of Alizarin Test Scores with Somatic Cell Count in Bovine Milk

The aim of this study was to reveal the association of alizarin test scores (ATS) with somatic cell scores (SCC) in bovine milk. The milk samples (n=60) were collected from three milk selling points in Samsun province of Turkey in two test days (TD). To obtain ATS, change of colour in milk after adding dye solution were used (ATS 1: red-brown/normal, ATS 2: yellow/acidic, and ATS 3: violet/alkali). To test for reliability of ATS by acidity, pH values of the samples were measured with a standard pH meter. In SCC analyses, direct microscopic cell counting was applied. Of examined parameters, only SCC was differed by TD, and both pH and SCC were differed by the location. According to ATP groups, pH and SCC means were also changed. Finally, estimated weak (r=0.247) correlation coefficient between ATS and SCC pointed out that ATS data are not suitable to detect quality degree of bovine milk samples.

Despite positive effects on nutrition, it has been reported that milk causes allergic reactions and many health problems. Allergic reaction to milk is called lactose intolerance, but it is estimated that this is not caused by lactose, but by the β -casein structure of milk, which varies depending on animal species. Although there are many fractions of β-casein in the structure of milk, especially A1 and A2 casein attract attention. A1 β -casein causes many health problems because it plays a role in the formation of the bioactive opioid peptide β-casomorphin-7 (β-CM-7). These health problems are allergic reactions, weakening of the immune system and slowing down of the gastro-intestinal system and some systemic diseases (cardiovascular disease, type 1 diabetes, autism, schizophrenia). The underdevelopment of gastro-intestinal system, especially in newborns, causes us to encounter these health problems more frequently. For this reason, the consumption of milk containing A1 β-casein, especially cow’s milk from culture breeds, is not recommended. Since BKM-7 (β-casomorphin-7) formed by A1 β-casein cannot occur in A2 β-casein, these health problems cannot be expected to be observed. However, A2 β-casein causes DPP4 (dipeptidyl peptidase 4) enzymes to be regulated in the body and a non-opioid effect is observed. It is recommended to consume goat’s milk and dairy products containing A2 β-casein in newborns, people with celiac disease and stomach disorders. Despite the lack of studies on the subject of A1 and A2 β-casein and the ongoing discussions, in this review, the importance and differences of A1 and A2 β-caseins in cow and goat milk were discussed and their effects on human health.

Qualitative studies on chhana were carried out at Sindh Agriculture University Tandojam during the year 2011-12. Two milk sources (i.e. cow milk and buffalo milk) and three coagulants (i.e. acetic acid, citric acid and lactic acid) were used during the study period. Physical characteristics such as titratable acidity and pH values. Preliminary, the chhana was prepared from each of cow and buffalo milk coagulated with acetic acid, citric acid, and/or lactic acid each at 0.5, 1, 2 and 4% concentration level. Among each coagulant, concentration level showed significant influence on the acceptability score of chhana. Product made with 0.5% concentration level perceived the better acceptability (score). A remarkable influence of milk source was observed in pH values of chhana prepared from cow milk and buffalo milk either with acetic acid (5.65±0.01 and 5.45±0.01, respectively) or with citric acid (5.52±0.02 and 5.45±0.01, respectively). In this study, buffalo milk chhana was found better in all aspects compared to that of cow milk.

The aim of this study was to reveal the relationships between dye reduction test scores and somatic cell count (SCC) in bovine raw milk. The SCC, methyelene blue reduction scores (MTS) and resazurin reduction test scores (RTS) were determined at biweekly intervals in four test days (TD) between March and April 2017 in a total of 89 raw milk samples sold in Samsun province as unpacked. While SCC values were recorded by an automatic counter, all SCC values were transformed to log10 base before statistical analysis.
