Furkan Yılmaz | Lütfi Bayyurt | Samet Hasan Abacı | Yalçın Tahtalı
The aim of this study is to compare the least squares (LS) method that lost its function in the case of multicollinearity in regression methods with Ridge Regression (RR) and Principal Components Regression (PCR) which are bias estimators. For this aim, the effect of some body measurements on body weight (BW), body length (BL), height at withers (HW), height at rump (HR), chest depth (CD), chest girth (CG) and chest width (CW) obtained from 59 Saanen kids at weaning period raised at Research Farm of Tokat Gaziosmanpaşa University. Determination coefficient (R2) and mean square error (MSE) values were used to evaluate the estimation performance of the methods. The multicollinearity between height at withers (HW) and height at rump (HR) which were used to estimate body weight was eliminated by using RR and PCR. When R2 and HKO values of the examined methods are compared; It has been shown that RR method have better results of live weight of Saanen goats.

Knowledge of root architecture is significant since it influences on pathways from, photosynthesis products, water and nutrient movement. This study purposed to elucidate root mass, root length, root/shoot ratio, root/total mass ratio and above-ground characteristics in Vicia pannonica Crantz., Carthamus tinctorius L. and Pisum sativum ssp. arvense L. with taproot and Triticum aestivum L., Hordeum vulgare L. conv. distichon, X Triticosecale Wittmack, Avena sativa L. and Secale cereale L. with fibrous roots at 200 cm long tubes under field-grown condition. Crop harvesting is based on early and late growth stages of cereal crops. The results indicated that winter field crops had a wide range of differences with regard to root and above-ground traits at both growth stages. The root traits of field crop species varied considerably from 0.3 to 5.9 g and 2.4 to 11.9 g for root mass and 84.7 to 127.7 cm and 84.5 to 166 cm for root length at early and late growth stages respectively, while shoot mass was between 0.3–5.7 g and 5.5–29.8 g. Furthermore, the percentage distribution of root mass accumulated in 0-20 cm root length at early and late growth stages, ranged between 52.3 to 81.4 % and 27.7 to 75.2 %, respectively. The findings showed that crops with taproot had less root and shoot mass and shorter root length than cereals with fibrous roots at both growth stages. This study also significantly advances our understanding of root-shoot competition by comparing the agronomical traits of winter field crops with tap and fibrous roots at different growth stages.

2020
Müge Baysal | Yeşim Elmacı
Dairy desserts, which have an important place in Turkish cuisine, are mild, more digestible and have high nutritional value than dough and syrup desserts. In recent years, studies for developing these products have increased due to the increase in consumer demand for low and zero fat products for many different reasons such as nutrition, health and weight control. However, the reduction of fat in food products often leads to undesirable changes in the structural properties of foods, which affects consumer preference. Fat in the formulation of such products, affects the appearance, texture, mouthfeel, and especially flavor. To eliminate the problems associated with the reduction of fat content in foods, whey protein-pectin complexes, λ-carrageenan, κ-carrageenan, short and long chain inulin mixtures, starch substitutes are generally used. Changes in fat content of dairy desserts with the use of substitutes affect color, rheology, texture, sensory perception, aroma release and perception. Milk fat content is effective on sensory detection, in vivo flavor and flavor release in semi-solid dairy desserts. The milk fat content (whole-fat, low-fat or non-fat) used in the production of dairy dessert affects the rheological and sensory properties of the product, the taste intensity perceived in the mouth, flavor release, flow behavior, flavor and viscoelastic properties. According to the reviewed literature, in dairy desserts with reduced fat content, the thickener type and concentration (starch, κ-carrageenan, carboxymethyl cellulose) have been determined to cause perceptible changes in the product’s color, flavor and texture, and may alter the physical and structural properties of the product. In this review, it was aimed to examine the aroma release and rheological properties of dairy desserts with reduced fat content by using fat substitutes.

2020
Girma Mideksa | Tasisa Temesgen Tolossa
Assessing available water and land for irrigation are important for planning their use. In the watershed, stream flows from some of the rivers are not known and potential irrigable areas have not been identified. By delineating watershed boundary, irrigation suitability factors such as soil type, slope, land cover/use, and distance from the water supply were classified based on the FAO guideline for land evaluation in to S1, S2, S3 and N suitability classes independently. The irrigation potential suitability analysis of soil, slope, land cover/use and Euclidean distance indicates that 55.1 %, 95.6 %, 88.6% and 93.7% respectively are in the range of highly to marginally suitable. By weighted overlay analysis, total surface irrigation suitability potential of the study area is 54.6%, from this, the potential irrigable land obtained by multi_ criteria analysis has 45.9%. The total available flow above abstraction site is 335.7m3/s or 2.9-million-meter cube (MMC) annually.

It is commonly well-known that biofilms are the predominant mode of bacterial growth, reflected in the clinic observations, where approximately 80% of all bacterial infections are related to biofilms. Bacteria in biofilms are well protected against environmental stresses, antibiotics, disinfectants and the host’s immune system and are usually extremely difficult to eradicate. Due to common problems caused by biofilms, alternative anti-biofilm strategies must be developed. Enterococcus strains are able to form complex surface-associated communities (biofilms), which contribute to its resistance and persistence in both host and non-host environments, and are especially important in food processing and clinical environments. Enterococcus biofilms showed increased antimicrobial resistance to the most of antibiotics as compared to the planktonic bacteria, which make them difficult to combat. There is an increasing evidence that biofilms are often associated with infectious diseases. Novel anti-biofilm strategies must be designed to include natural bio products instead of common antibiotics. Mushrooms are a nutritionally functional foods and a source of pharmaceuticals having functions such as antitumor, immunomodulating, antioxidant, cardiovascular, anti-hypercholesterolemia, antiviral, antibacterial, anti-parasitic, antifungal, detoxification, hepatoprotective, and antidiabetic. In addition, they have a notable activity against biofilms. In this study, the antimicrobial and anti-biofilm activities of some medicinal and edible mushrooms, namely Morchella angusticeps Peck, Ganoderma lucidum (Curtis) P. Karst., Cerioporus squamosus (Huds.) Quél., Trametes versicolor (L.) Lloyd and Lentinula edodes (Berk.) Singer were screened against multi drug resistant Enterococcus strains. As a result, it was observed that these mushrooms have notable potency to develop alternative medicines to struggle infectious diseases and biofilms.

2020
Selda Bulca | Fahriye Ümüt | Atakan Koç
In this study, microbial transglutaminase (MTGase) enzyme was used to produce yogurt from camel milk. It was reported that camel milk is rich in antimicrobial substances such as lysozyme, lactoperoxidase, lactoferrin and immunoglobulins, which prevent the production of yogurt from camel milk. With the advances in enzymology, it has been suggested that using enzymatic modifications to improve the functional properties and nutritional value of proteins may be effective in the production of yogurt from camel milk. For this purpose, the protein content of camel milk was increased by 6.2% with the addition of sodium caseinate, whey protein concentrate and micellar casein powder. MTGase enzyme was used at concentrations of 3 U and 6 U and the enzyme and the starter culture were added into the camel milk at the same time after that it was left for fermentation. Viscosity, pH and titratable acidity (as lactic acid, %) analyses were performed every hour during fermentation. The increase in viscosity formed as a result of cross-linking with the addition of MTGase enzyme, and the cross-linking formed were determined by decreasing the monomer band intensity of protein fractions with SDS-PAGE. It was found that the higher the MTGase concentration the higher the crosslinking reactions between the amino acids and the higher was the relative viscosity. In addition, the number of yogurt bacteria was determined on both M17 agar and MRS agar to investigate whether yogurt bacteria grow in camel milk and whether their growth is affected by the MTGase enzyme. As a result of the analysis, it was determined that the addition of MTGase enzyme has no suppressive effect on the growth of bacteria.

In addition to the good adaptation of high temperatures and poor soils, cowpea (Vigna unguiculata L.) can be a good source of forage for livestock. This study was carried out to determine seed yield and some agronomical parameters of cowpea grown in different row spaces as double crop in Samsun ecological conditions. In the experiment, forage cowpea cultivar Ulkem and Line H-8 grown in four row spaces (20, 35, 50, 65 cm) in a Randomized Split Block Design with three replications. Seeds were sowed after harvesting wheat at July 13, 2017 and 15 July 2018. Seed harvest was made at October 20, 2017 and November 5, 2018. The results showed that seed yields ranged from 765 to 2178 kg ha-1 in 2017 and 397 to 1464 kg ha-1 in 2018. 1000 seed weight ranged from 161.17 to 183.93 g in 2017 and 146.40 to 160.90 g in 2018. In 2017 and 2018, mature pod ratio were 65.7 – 85.8, 30.0 – 60.3% respectively. Pod number per plant was between 5.66-15.00 pods/plant in 2017, 9.50-16.25 pods/plant in 2018. Seed number per pod was ranged from 8.80 to 12.43 seeds/pod in 2017, from 8.00 to 11.50 seeds/pod in 2018. Though the highest seed yields were obtained from 20 cm row space, it is risky cultivated cowpea for seed production as double crop in Samsun conditions because of earlier autumn rainfall and high humidity.
