Cet article est la synthese thematique d'une enquete menee recemment aupres de professionnels (industriels, fabricants et chercheurs) des industries alimentaires sur le theme de la reduction de la consommation d'eau et de la production d'effluents polluants, liee a ces operations. Sont presentees dans un premier temps, secteur par secteur, des donnees de consommations d'eau et de volumes d'effluents produits. Il apparait que de nombreuses procedures de travail et procedes de fabrication peuvent etre ameliores. La tendance doit aller vers une gestion de l'eau comme matiere premiere ou solvant recyclable faisant partie integrante de la rationalisation des procedes (economie d'eau, d'energie, de matiere). Cette gestion passe par la minimisation des rejets apres epuration, en particulier dans le cas de traitement des effluents, et le recyclage des flux aqueux et de matieres, soit directement dans le processus classique de fabrication, soit de facon degradee dans les processus connexes. De nombreux points d'amelioration sont precises et des axes de recherche sont proposes

This study aims at analyzing the impact of water and soil conservation strategies on households? food security in the North-western part of Benin. It was conducted in the municipalities of Boukombé and Ouaké. Three villages were studied. From random way, 180 producers were investigated. The causes of soil degradation, water and soil conservation strategies, available food supply and food consumption frequency were collected. Degradation factors were analyzed using discourse analysis and prioritized using the Friedman test. Food supply and frequency of consumption were compared between beneficiaries and non-beneficiaries of the projects using the Student t test. Land degradation is caused by socio-cultural factors (overexploitation of lands, trees? cutting, late bush fires, grazing, agroforestry and monoculture) and natural factors (heavy rains and steep gradient of the soils). The first three factors are respectively the exploitation of land, trees? cutting and late bush fires practice in both towns. Food reserves before the new crops were not affected by exogenous strategies released by the erosion control projects. But the frequency of food consumption is improved statistically among project beneficiaries than non-beneficiaries. Freshwater use for food production is projected to increase substantially in the coming decades with population growth, changing demographics, and shifting diets. Ensuring joint food-water security has prompted efforts to quantify freshwater use for different food products and production methods. However, few analyses quantify freshwater use for seafood production, and those that do use inconsistent water accounting. This inhibits water use comparisons among seafood products or between seafood and agricultural/livestock products. This 'seafood gap' in the food-water nexus literature will become increasingly problematic as seafood consumption is growing globally and aquaculture is one of the fastest growing animal food sectors in the world. Therefore, the present study 1) reviews freshwater use concepts as they relate to seafood production; 2) provides three case studies to highlight the particular water use concerns for aquaculture, and; 3) outlines future directions to integrate seafood into the broader food-water nexus discussion. By revisiting water use concepts through a focus on seafood production systems, we highlight the key water use processes that should be considered for seafood production and offer a fresh perspective on the analysis of freshwater use in food systems more broadly | Jessica A.
