In this work, the results of a research carried out on structures and systems for the management of livestock waste adopted in Calabria are presented. Two aspects of the problem are analyzed: territory and farming. From the macro-scale analysis emerged that there are no limits to the spreading of manure, nor environmental pollution has been registered. The micro-scale analysis showed a low level in the structural design methods and maintenance criteria, so that correct and optimum waste storage and handling systems are needed, as well as to avoid in the near future the negative effects due to an incorrect planning | Nel presente lavoro vengono riportati i risultati di una ricerca condotta in un ambito territoriale della Calabria sulle strutture e le attrezzature per la gestione delle deiezioni zootecniche. Due diversi aspetti del tema sono stati analizzati: il primo di carattere territoriale, il secondo circoscritto all'azienda zootecnica. Dall'analisi su macro scala e' emerso che l'attuale distribuzione delle aziende sul territorio non comporta, in genere, problemi di impatto negativo sull'ambiente, ne' sussistono limitazioni allo smaltimento dei reflui zootecnici, dato che il carico animale in rapporto alla SAU non supera il 6.5% del valore massimo ammesso dalla normativa nazionale. Tuttavia, a livello aziendale, si rileva una scarsa attenzione dei soggetti interessati - progettisti ed operatori - verso gli aspetti costruttivi e gestionali del problema, con il risultato che strutture ed impianti non possiedono requisiti sufficienti a garantire un trattamento ottimale dei reflui. Fra l'altro, in assenza di una specifica programmazione, gli effetti dovuti ad un'errata politica gestionale potranno, nel prossimo futuro, essere rilevati anche nell'ambiente

The author explained how food service managers can elicit support for waste management programs from their customers. She feels the best approach is to ask customers what they currently know about waste management issues and how they might be willing to help establish a program for food service.
