Physical properties of selected legume seeds as indicators of technological suitability of small-seed broad bean

Selected physical properties of small-seed broad bean varieties, determining their technological value, were studied. Seeds of small-seed broad bean varieties Gobik and Goral were used as the experimental material. Large-seed varieties Batom and Windsor Bialy and seeds of three edible pea varieties: Albatros, Karat, Miko, were used for comparison. The studies included the determination of: 1000 seeds mass, percentage of seed coats, seed hardness before and after soaking, and water-holding capacity. Due to their physical properties, small-seed varieties of broad bean resemble pea more than its large-seed varieties. Small-seed varieties, compared with large-seed ones, show smaller differences in mechanical resistance and better water-holding capacity, which makes them more suitable for technological processing

Pear of Emilia-Romagna obtained from the European Community Council the specific distinctive of PGI (Protected Geographical Indication) label in 1992. Pear production is based on a small number of well-known cultivars (Abbe' Fetel, Bartlett, Max Red Bartlett, Bosc, Conference, Comice), which ensure high qualitative standards. These cultivars are susceptible to fire blight and the rise of Erwinia amylovora in the Po Valley is presently requiring the consideration of different tools and practices to counteract its spreading; among them, the introduction of pear cultivars more tolerant to fire blight. Several breeding programs are aimed at obtaining fire blight-resistant cultivars and a number of new cultivars and advanced selections are reported to have high tolerance to the pathogen. Since a prerequisite for a successful introduction of a new pear cultivar is fruit quality of PGI level, a joint project Regione Emilia Romagna-CRPV-ISTEA has been developed to evaluate sensory traits of fire blight tolerant pears, to selects those more suited for the production in this area. The fruit sensory analysis methods are aimed at selecting the new cultivars more suitable for high quality pear production in Emilia-Romagna. Data related to investigations conducted on Harrow Sweet are presented and discussed. The knowledge of sensorial characteristics could be also of support for new cultivars acceptance, as a tool to communicate to consumers the peculiar traits of the fruits | La pera tipica dell'Emilia Romagna, tutelata dal marchio di Indicazione Geografica Protetta (IGP), deve garantire livelli qualitativi di eccellenza, dalla produzione alla commercializzazione e al consumo. Lo studio delle qualita' organolettiche e' perseguito con la messa a punto di metodologie specifiche di analisi sensoriale. In particolare, i test piu' ricchi di informazioni sono quelli di Analisi Descrittiva Quantitativa (QDA). Sono presentati i dati relativi alla valutazione sensoriale della cultivar Harrow Sweet in relazione alla data di raccolta e ai tempi di commercializzazione. In base ai parametri qualitativi di succosita', consistenza, dolcezza, acidita', aromaticita', granulosita', astringenza, l'epoca di raccolta risulta un fattore importante. Per Harrow Sweet il prodotto raccolto a meta' settembre ottiene elevati giudizi gustativi, ma si presta per tempi piu' brevi di frigoconservazione. Per una eventuale commercializzazione a gennaio appare invece utile anticipare la raccolta alla fine di agosto. I test sensoriali evidenziano i fattori che possono determinare giudizi e scelte del consumatore e possono contribuire a orientare la programmazione e a valorizzare l'impegno di tutta la filiera frutticola

Evaluation of quality of poultry feed produced in Latvia

Wholesome feed produced in Latvia for domestic birds - layers, layer chicks and pullets, broilers, turkeys and geese was analysed. The analysed feed met requirements of non-hazardousness because it did not contain medicine (chloramphenicol), meat and bone meal as well as biologically significant feed additives, i.e., content of copper and zinc did not exceed max permitted standards that have been defined for wholesome feed at moisture of 12%contamination with heavy metals (lead) was 50-71 times less than max permitted standard in the EU countriesfeed did not contain bacteria of genus Salmonella. The criteria of feed quality - total protein, the content of calcium, phosphorus did not always provide max expression of poultry genetic potential for the respective species, direction of productivity and age group for output of production. The content of dry matter of feed completely met the criterion laid down by European Community for wholesome poultry feed mixtures produced in Latvia: did not exceed 14% of moisture.
