Effect of some technological factors on amount of heavy metals in wine

The influence of the type of press, cleaning of grape must before inoculating with a yeast starter as well as the influence of filtration of produced wines on the amounts of copper, lead, cadmium and zinc was investigated. Produced wines contained more heavy metals when the pomace was pressed by the continuous - screw type press than the basked type one. Wines produced from the cleaning must contained less heavy metals. Filtration materials used for wine filtration decreased the amount of heavy metals in wines.
