Different potato varieties have an average 1.5-2% crude protein content in their tubers. In comparison with other crops this is a relatively low value; however, if the crude protein production on an area of one hectare is calculated, taking world average yields into consideration, potato(273 kg protein/ha) takes second place, preceded only by peas(304 kg protein/ha) (Winiger 1978).
