The research deals with the preservation of vegetable and fruit quality during storage. The problem of cooling vegetables by air ventilation is discussed. The mathematical model of the cooling process obtained by means of the basic laws of physics is described. The advantages and disadvantages of cooling vegetables by ventilation are explained. On the basis of the worked out storage model it is possible to optimize the regulation of heat-moisture processes in storehouses for a particular kind of product. Considering the ensurance of heat transfer from the product it will be possible to carry out successful cooling and storage of vegetables and fruits.
