The paper gives insight into the system of quality admission of agricultural products and foodstuffs in France before the manual of the EC 2081/92 and subsequent revision of the oldest and rigorous in Europe. The comparative analysis among numerous existing quality indicators has done, analyzing their origin and development, arrangement domain and significance. The French system of quality admission has been taken as a model for the European's system of quality admission, although we observe some contradictions between the Nordic countries based on the German model and the South countries based on the French model. Therefore the generality of problems is considered at the context of the unitary Europe.
