保加利亚语. The biochemical characteristics of the yeast autolysate and debittered brewer's yeast with reduced content of ribonucleic acid was reported. The high biological value and nutritional importance of the products is centred about significant contents of the soluble nitrogen, B-vitamins, trace mineral elements and other biologically active components. Chemical composition and flavour potential favoured their usage as food ingradients and yeast-supplemented food (in dietary, health food, special products).
