[Classification of pigs, cattle and sheep carcasses]

This monography describes classification methods used in the Czech Republic for classifying pig, cattle and sheep carcasses. In addition, partial results of carcass evaluations based on the SEUROP classification system are presented. One hundred lamb carcasses of the breed Merino and crosses with Charollais, Suffolk, Oxford Down and Texel were analysed in 2001. The average body weight at slaughter was 34.7 kg. The carcasses were classified into the different SEUROP classes as follows: E 1, U 17, R 59, O 22 and P 1 carcass. Concerning the fatness, 36 lambs were in the class 2, 56 animals in the class 3 and only 4 animals in the class 4. The last chapter deals with the requirements necessary for training classifiers.
