The author offers a brief survey of the present day microbiological questions concerning the fruit juice and of the spoilage-incidents experienced during the past decade. He informs us about an analytical method that he considers - based on the special literature and on his scientific investigation - suitable for the detection of "Alicyclobacillus acidoterrestris", with the help of which - before use - the fruit juice and fruit concentrates can be qualified.
