For many consumers, yoghurt is major source of folic acid/folate. Folate production can be enhanced considerably through selected of suited strains of yoghurt bacteria. Raising the folate content of yoghurt by a factor of 5 seems not to be unrealistic. That finding emerged from studies at NIZO Food Research in Ede and Wageningen Centre for Food Sciences
