Isolation of erucic acid from mustard oil by lipase-catalyzed and alkali hydrolysis
1997

Alkali and lipase (Candida cylindracea) hydrolysis were used to hydrolyse natural oil with the goal of producing industrially erucic acid. Under alkali hydrolysis, mustard oil (Brassica juncea) was hydrolysed and verified by gas chromatography on DB-1 capillary column. The amounts of erucic and oleic acid were found to be 23 and 22 percent respectively. Hydrolysis of mustard oil under lipase activity yielded less erucic acid than that obtained by alkali hydrolysis.
