CIS- and TRANS- fatty acids of milk produced from sheep grazing on mountain pastures

The study was carried out in the Rhodopes mountains region on individual samples of sheep milk, collected from eight Tsigay crosses with Blackhead Pleven rams during the pasture period of sheep (may-july). The total content of unsaturated fatty acids was the highest in sheep milk in June (35,5g/100g fat) and that of mono- and polyunsaturated ones - 26.0 and 9.5g/100g fat respectively. The total conjugated linolenic acid (CLA) content in individual samples of sheep milk varied from 18.2 mg/g milk fat to 56.5 mg/g fat.
