英语. An HPLC method was developed which allows to identify and quantify, in one chromatographic run, the phenolic compounds phloridzin and arbutin which characterize apple and pear, respectively. In this way, possible mixtures of the two fruits made for sophistication purposes can be detected with good reliability. Controls performed on commercial clear juices and nectars prepared exclusively from apples or pears confirmed their uniformity with what reported on the label
