Usefulness of Polish savory cultivar Saturn for organic cultivation was investigated in four field experiments. The following traits were examined: yield of fresh, dried and without stems herbs, stem content in herb, yield of seeds, weight of 1000 seeds, essential oil content, mineral elements content and microbiological contamination. Herb yield only from one organic cultivation (in Slonsk) was higher compared with that from the conventional cultivation. Savory herb from organic cultivation contained more essential oil and mineral elements except calcium. Microbiological contamination analysis of savory herb showed that all investigated herbs were below the level of standard contamination for raw material treated with hot water
