Comparison of Amaranthus cruentus and Zea mays L. stach [i.e. starch] characteristics

This paper describes the procedure for amaranth starch isolation. Starch was isolated from Amaranthus cruentus seed by low alkaline steeping and protease treatments. The properties of isolated amaranth starch were analysed and compared with those of normal and waxy maize starches.
