Dried fruits are very susceptible to biochemical changes during storage, due to low matter content, as well as low a(w) value. The shelf life of these products depends on a(w) value. To keep optimal technological quality of dried fruits, it has be needed to ensure work was to define the quality of packaging material and conditions of packaging using vacuum and modified atmosphere, to provide the successful shelf life of packaged dried fruit.
