The characteristics of plum kernels (Stenley, Pozegaca, Dzenerika) were investigated considering the content of oil, moisture, cellulose and protein. The oil was extracted with hexane applying the enzymatic procedure. In obtained oils the composition of fatty acids as well as the content of phosphatides and individual tocopherols were also determined. The oxidative stability of oil was examined using Ramzimat-Test and by following the changes of peroxide number in oil samples thermostated at 60 deg C.
