Qualita' nutrizionale della carne del suino pesante in rapporto al tipo genetico e all' alimentazione [Umbria].

The aim was to standardize production of heavy swine in Umbria. 120 animals (25 kg of live weight) of two different genetic type (Large White and Hylete) were subdivided with respect of feeding method (restricted to slaughtering or ad libitum to 70-80 kg live weight and then restricted to slaughtering). A further division was done regarding diet component (incorporation or not of fatty acids in isoenergetic and isonitrogenous diet). At slaughtering, samples of blood and ham were taken to analyse cholesterolemy, chemical composition, acidic lipid composition and cholesterol level of meat. Feeding method and genetic type did not influence qualitative lipid composition of ham meat. On the contrary, diet quality had a significant effect. Cholesterol content of both blood and muscle was unvaried. Conclusion confirms the zootechnical investigation.
