Characteristics and application way of PA Pectopol - a new domestic enzymatic preparation beside P and PT Pectopol, for the needs of fruit-and-vegetable processing industry are presented. This is a complex preparation containing pectinolytic enzymes and glycoamylase (beside other accompanying enzymes), designed for clarification of apple juices with increased (by over 0.05 percent) starch content.
