Volatil compounds of fermented sausages | Fermente sosislerde uçucu bileşikler

英语. The types and amounts of volatile compounds of fermented sausages change according to the characteristics of raw materials, ingredients, and processing conditions (traditional or industrial). Proteolytic and lipolytic enzymatic reactions and other chemical reactions, such as lipid oxidation and amino acid degradation, play important roles in the formation of volatile compounds. Hydrocarbons, aldehydes, acids, ketones, alcohols, esters and sulphur compounds are common volatile compounds in these types of meat products. Another group of volatiles are terpenes. In this study, volatile compounds of dry and semi-dry fermented sausages, particulary of sucuk, described in the light of the literature.

Fermente sosislerde uçucu bileşiklerin miktar ve çeşidi, çiğ materyalin özelliklerine, katkı maddelerine ve üretim şartlarına bağlı (geleneksel veya endüstriyel) olarak değişiklik göstermektedir. Uçucu bileşiklerin oluşumunda proteolitik ve lipolitik enzimatik reaksiyonlar ile lipit oksidasyonu, amino asit degradasyonu gibi diğer kimyasal reaksiyonlar önemli rol oynamaktadır. Bu tip et ürünlerinde uçucu bileşik olarak hidrokarbonlar, aldehitler, asitler, ketonlar, alkoller, esterler ve sülfürlü bileşikler yaygın olarak bulunmaktadır. Diğer bir uçucu bileşik grubu ise terpenlerdir. Bu çalışmada kuru ve yarı kuru fermente sosislerde, özellikle de sucukta uçucu bileşikler literatür bilgileri ışığında derlenmiştir.
