Influence of sunflower seed processing modes on the content of phospholipids in oil.

An analysis of the conversion of phospholipids into oil during the heat treatment process of sunflower kernel fractions has been carried out. Data on the amount of phospholipids in extracted oil obtained by direct extraction from sunflower raw materials are presented. It was found that the major part of the phospholipids is transferred to the extracted oil, which allows further hydration of the extracted oil. Tab. 1, Ref. 6.
