Abstract: This nutrition education program teaches fundamentals of nutrition with an emphasis on lowering cholesterol in the diet. What lipids are and the role of cholesterol in the body are discussed. Topics include: calculating dietary patterns; nutrient content of food groups for cholesterol lowering; estimating caloric needs; personal eating habits; computing caffeine intake; reading labels; menus for cholesterol lowering diets; and recipe modification.
