Formulation of low calorie cereal bar

Low calorie cereal bar was formulated using different proportions of jaggery, Stevia, Oat flex, finger millet flour, Amaranth, chocolate Flavor and Acacia gum. The product was assessed for physicochemical attributes. The energy value of the bar containing highest amounts of stevia and acacia gum was 298.49 Kcal/100gm, which was considered as a low calorie cereal bar.
