The present review is not comprehensive but will discuss some of the influences of isomeric trans monoenoic and dienoic fatty acids on human health and will also highlight the lack of knowledge concerning the metabolic effects of cis isomeric fatty acids which are also produced during chemical hydrogenation of edible oils.
