This article describes the processing of potatoes to make potato chips. Regular, kettle-style and fabricated chips are discussed. The nutritional value of potatoes is examined and compared to other salty snack foods. Several brand name products are evaluated and rated for flavor, appearance and texture. Flavored chips (barbecue and sour cream and onion) are briefly mentioned.
