Sensory and qualitative indices (hardness and colour) evaluation of cakes with Jerusalem artichoke (Helianthus tuberosus L.) powder

Jerusalem artichoke powder (JAP) from Jerusalem artichoke (Helianthus tuberous L.) roots is a nutritive valuable product that can be used for a healthy product development. The influence of JAP on the quality and degree of liking of cakes was investigated. Sensory evaluation of cakes was realized in two stages: the first - to define the quality attributes of the cakes with JAP from the point of view of the experts, the second – to find out the consumers' views on the cakes, whose quality has been improved in accordance with the recommendations of the experts. As a control sample, the classic home cake was evaluated. Control sample was compared with the cakes, where the amount of wheat flour prescribed by recipe was partly substituted with JAP at different concentrations. Experts evaluated cakes and defined the highest acceptable concentrations of JAP in cakes. For the consumers it was offered to assess the cakes with JAP at concentration 30% and with different taste and aroma enhancers. Cakes with 30% of JAP additive were the most favoured by the sensory properties: aroma, texture, softness elasticity, porosity and softness, surface crust, appearance, colour, shape, and size. Results of analysis of variance showed that there no significant differences in the degree of liking between the cakes with JAP and the cakes with taste and aroma enhancer additives (p is greater than 0.05). There had been performed hardness analysis and colour measurement for cakes with JAP. The observed results declare high influence of aroma and taste enhancer on cakes structure and colour.

Growing interest of consumers in healthy eating has provided the development of new range of food. Therefore the task of research was to determine the nutritional value, calculate energy value and investigate the sensory properties of yoghurt samples enriched with flakes from biologically activated hull-less barley grains and malt extract. Results showed that by adding flakes from biologically activated hull-less barley grain and malt extract it was possible to improve the nutritional value of yoghurt, i.e., increased protein, carbohydrate and decreased fat content. The energy value of yoghurt samples enriched with flakes from biologically activated hull-less barley grain and malt extract ranged between 65.96 and 75.72 kcal 100 gE-1, which is significantly lower comparing with mean energy value of commercial yoghurts. The changes of sensory properties were affected by the amount of added malt extract in yoghurt samples. The optimal amount of added malt extract for sensory evaluation in yoghurt samples was determined as 2%. The content of carbohydrate in yoghurt sample enriched with 5% of biologically activated hull-less barley grain and 2% of malt extract was two times lower than commercial yoghurts therefore its energy value was significantly lower. Yoghurt enriched with flakes from biologically activated hull-less barley grain and malt extract could be competitive.

Vegetable processing in food industry results in significant number of by-products – peel, mark, bark, seeds still rich in bioactive compounds. The objective of this study was to investigate the stability of total phenolic content (TPC) and antioxidant activity after high temperature short time (HTST) extrusion cooking of a rye and oat- based matrix with addition of apple, carrot and pumpkin by-product flour (BPF) in various amounts (5%, 10%, 15% and 20%). Extrusion was performed with co-rotating twin-screw extruder (compression ratio 8:1) at Ltd MILZU. The main drive of extruder was provided with a 7.5 HP motor (400 V, 3 HP, 50 cycles). Temperatures for extrusion zones were 125 °C /135 °C /145 °C. TPC was determined using the Folin Ciocalteu method. Antioxidant activity was evaluated by free radical 2, 2-diphenyl-1-picrylhydrazyl (DPPH) antioxidant scavenging activity. TPC in cereal-based crispbread was 62.03 ± 0.15 mg GAE gE-1 DW before extrusion and 37.73 ± 1.96 mg GAE gE-1 DW after extrusion. Addition 20% of apple BPF increased TPC in crispbread to 193.92 ± 1.37, carrot BPF 171.36 ± 6.97 and pumpkin BPF to 195.09 ± 4.68 mg GAE gE-1 DW after extrusion. Antioxidant activity of control (20% oats, 80% rye flour blends) sample was 0.516 ± 0.192 mg TE gE-1 DW but in samples with addition of 20% by-products, it was significantly higher reaching 0.926 ± 0.05 TE gE-1 DW in samples with pumpkin by-products after extrusion.

A research has been done on the possibility to increase the range of beer drinks by substituting hops with additives of other plants in the wort boiling process. The obtained data present evidence of the possibility of substituting hops by oak bark, yarrow, wormwood and oak acorn.

Germinated grains are added to wheat dough with the purpose to promote the biological value of bread. As a result, a new product was obtained with a higher content of protein, fibre, B group vitamins; and vitamins C and E. The task was to investigate gluten quality changes at grain germination time, wheat dough rheological properties changes with various wheat, rye and barley amount additions, germinated for a different time. With the purpose to save maximum stability value of gluten, it was ascertained that the germination time of wheat grain could not be more than 24 hours. The best dough quality was obtained with germinated wheat grain additive. Germinated rye and barley grain additive (more than the experimentally ascertained amount) increases dough softening, decreases dough development time and dough stability. Only adding experimentally determined optimal amount of germinated grain, which promotes high quality bread, could produce dough with accepted rheological properties.

The major wheat flour constituent, which determines the dough quality, is gluten. Oatmeal has higher biological value due to amino acid composition and content if compared to other cereals, but the technological properties of proteins are not as good as the ones of wheat flour. Oat products can be used in bread making although the increased amount of additives shows negative influence on bread texture, elasticity, volume, taste, and flavour. The method is developed for hydrolysed oatmeal separation in soluble and insoluble fractions, thus extending the oatmeal application possibilities. The aim of the current research was the investigation of influence of hydrolysed oats insoluble fraction on wheat dough rheological properties. The obtained results proved that in case hydrolysed oats insoluble fraction additive was used, water adsorption was increased by 63.8%-66.4% and dough stability time was changed from 4.8 to 10.0 min. The negative influence on dough development time and dough softening degree was observed. The farinograpgh quality index was within acceptable limits (less than 120 FU), if the oat additive of 10% and 15% was used. It is possible to obtain dough with better rheological properties if the hydrolysed oats insoluble fraction additive is 15% from flour mass.
