Diversity of non-starter lactic acid bacteria in Latvian semi-hard cheeses

The most non-starter lactic acid bacteria (NSLAB) isolated from semi-hard cheeses are heterofermentative and handled as one of the reasons of cheese off-flavours and yield defect but at the same time majority of researches argued positive effect of NSLAB on cheese flavour formation and diversification due to rendered compounds of chemical reactions. The amount of NSLAB in cheese varies from 10 at the beginning of ripening to 105 cfu mlE-1 within 6-8 weeks. The aims of this paper were to establish diversity of NSLAB in commercial samples of Krievijas and Holandes cheeses, and to evaluate the effect of ripening temperatures on NSLAB in the trials of Krievijas cheese. A total of 12 commercial cheese samples from seven different Latvian manufacturers and trials from one cheese manufacturer were examined. The trials were ripened for 60 days at different temperatures - 6 deg C and 12 deg C. Serial dilutions of each cheese sample (1:1000 and 1:10 000) in saline were made. NSLAB were cultivated using MRS media. Strain identification was performed by the API 50 CHL system (BioMerieux, Marey l'Etoile, France). In commercial samples of Krievijas cheese dominance of L. curvatus was observed, simultaneously L.plantarum and L.paracasei subsp. paracasei were isolated. Whereas in Holandes cheese samples dominance of L.paracasei subsp. paracasei was noted and L.plantarum, L.curvatus, L.rhamnosus and L.acidophilus were isolated. In the trials ripened at different temperatures prevalence of L.curvatus was noted. Concentration of Lactobacillus spp. varied from 104 cfu mlE-1 on the first day of ripening and reached the highest concentration (106 cfu mlE-1) after 6 weeks of ripening.

Pollution of atmosphere and decrease of fossil fuels stimulates people to search for an alternative energy sources for production of energy, both electrical and heat. In Latvia it is possible to use almost all alternative energy sources for production of energy, including solar energy that becomes more relevant year by year. Solar radiation in direct way makes no hazardous, but, as the intensity of solar radiation in geographical location of Latvia is comparatively low, the utilization of it demands relatively expensive equipment. Production of energy from other sources of energy also demands certain investments as well as the purchase of fuel, maintenance of equipment and presence of different manipulators. In practice several types of solar collector constructions with efficiency from 30 up to 75% exist and expenses vary in the wide range. The average number of sunshine hours in Latvia is about 1800 hours yearly. Nevertheless solar collectors for water heating in Latvia are used. Mostly flat-plate collectors are used whose efficiency often is not sufficient and water has to be additionally warmed-up. The aim of our investigation is to study operation of evacuated tube collector in conditions characteristic to Latvia. It is stated that it is feasible to use evacuated tube collector for water heating in Latvia, especially from March till October. During winter period solar collector can be used as additional energy source for water heating.

The research focuses on the study of physically-chemical and microbiological parameter changes in Latvian wild cranberries during convective drying. The research was accomplished on fresh Latvian wild cranberries. The following quality parameters were controlled during the experiments: moisture content (oven-dry method), content of vitamin C (LVS EN 14130:2003), content of polyphenol (HPLC), preparation of samples for microbiological testing (LVS EN ISO 7218:2007), enumeration of yeasts and moulds (ISO 21527-2:2008(E)), counting of lactic acid bacteria (LVS ISO 13721:1995), and total plate count (LVS EN ISO 4833:2003A). The research detected the following optimal convective drying parameters of wild cranberries: temperature – +50±1 deg C and drying time – 20.3 hours. The moisture content of dried berries equalled to 9.0±0.1%. The content of vitamin C decreased 1.9 times in wild cranberries dried at the temperature of +50±1 deg C compared with the content of vitamin C in non-dried cranberries and was 13.05 mg 100 gE-1 in dry matter. The results of current experiments show, that the content of such polyphenols as gallic, caffeic, and epicatechin acids decreased 9.70, 9.90, and 11.68 times, respectively, during the treatment at temperatures up to +50±1 deg C compared with the initial content of these compounds in non-dried berries. The drying temperature substantially influences the microflora development in cranberries. It is possible to decrease significantly the content of LAB, mould, and fungi in berries provided the drying temperature of the wild cranberries does not exceed +50±1 deg C, thus prolonging the ready product shelf-life.

The pollution of the river water with organic matter deteriorates the chemical, biological and microbiological quality of the water and has a negative effect upon the biological variety of the water environment. The paper analyses the study period (1996-2000) seasonal change of organic matter in the upper reaches of the River Nevezis (study sites upstream and downstream Panevezys). The highest amount of organic matter (according to chemical oxygen demand and biochemical oxygen demand) got into the river under the influence of concentrated pollution, the fewer amount - under the influence of agricultural pollution and in the course of natural processes. The concentration of organic substances in the river water had a seasonal character: rivers with a better ecological state (the Juosta) were more polluted with organic matter in spring, when water temperature was below 10 deg C, but rivers with a worse ecological state (the Nevezis upstream and downstream Panevezys) – in summer (water temperature was higher than 10 deg C). This may be related with fresh pollution; in the former case organic matter might have come from the environment together with the runoff, in the latter case - due to decomposition of water vegetation and fauna residues in the river itself. In all rivers water temperature was by 0.1-4.4 deg C higher in 1996-2000 in comparison to that in 1986-1989, a significant temperature increases were observed in winter and autumn. The water temperature arose mostly below the town.

Dairy ecosystems have been developing in thousands of years giving us wonderful collection of different types of cheese varieties. On the other hand, modern technology provokes the loss of variability (Adamberg et al., 2007). The only way to keep biological processes under control is to study physiology of microorganisms, and relationships between them systematically, especially non-starter lactic acid bacteria (NSLAB). The number of non-starter lactic acid bacteria increases during cheese ripening and may constitute a dominant population in the mature cheese. The NSLAB diversity, their metabolism and interactions with starter bacteria have an effect on the ripening process of the cheese. The aim of the present study was to investigate the diversity of Lactobacillus spp. during ripening of Krievijas cheese. The diversity of different profiles varied among the cheese samples matured at different temperatures, and the results indicated a correlation between NSLAB species and aroma development (Miķelsone et al., 2009). A higher metabolism of Lactobacillus curvatus at 12 deg C leads to faster depletion of nutrients and approaching the last two phases of microorganism growth curve. However, in each of the cheeses, the microflora had a tendency to be dominated by one Lactobacillus profile at the end of maturation.

Nowadays all engineering technologies are based on the automation, but still there are some processes that are not easy to automate. One of them is the heating process using solid fuel boilers. The paper deals with automated double-link air flow control of the combustion process. The research target was to find more effective solutions of furnace air flow regulation to improve the combustion process efficiency. The research object was a 56 kW wood briquettes water heating boiler. The results of the experiment research show a higher efficiency of the combustion process with double-link air flow PI control using motor valves.

Maize yield and quality are affected by many factors, including production practices, diseases, pests, and differences in the climate. Usually it is not possible to do much to change the effect of temperature, but it is important to grow better adapted or characterized with right maturity rating hybrids. The paper is aimed to determine the impact of accumulated growing degree days (GDD) on maize development, organic dry matter yield, ODM and chemical composition of maize hybrids. A field trial was carried out in the Research and Study farm ’’Vecauce’’ of the Latvia University of Agriculture (LLU) from 2008 till 2010. Ten (in 2008), eleven (in 2009) and fifteen (2010) maize hybrids with different maturity ratings according to FAO numbers (FAO 180-340) were harvested at three different times beginning on 5 September at fourteen-day intervals. GDD were calculated when maize reached a certain growth stage (full emergence, first tassels, full tassels, first ears, full ears, specific harvest date) to characterize conditions for maize growing in a specific year. Composition of fresh maize was analyzed for all hybrids using standard methods. Results were statistically processed using methods of correlation and regression analysis. Our results presented evidence that ODM yield in 2008 and 2009 on last harvest dates was lower than that on the first harvest date in 2010. Organic dry matter yield was higher in years when more GDD were accumulated. Results also showed that GDD negatively correlated with the total N, protein, fibre cellulose, hemi-cellulose, NDF, and ADF concentration.

Oil-flax has a wide range of utilization possibilities, inclusive of bioenergy production. In our research evaluated out two oil-flax varieties 'Scorpion' and 'Flanders' after the calorific value, oil, lignin, and ash content; and also the chemical composition in 2008 -2010. The results show that oil-flax shoves have a high calorific value and high lignin content but a low temperature for ash fusion. It was established that the growth year and some unexplored factors have influence on the ash content. The oil content in the seeds was 336-458 g kgE-1, depending on the chosen variety. The flax shoves can be used as a supplement for biofuel combustion, as they have a low fusion temperature, a high calorific value, but a comparatively low yield makes oil-flax unprofitable to grow for biofuel production.

The paper discusses heat transfer and the step response of a low-power induction motor to no-load mode under fan cooled and naturally cooled conditions. In Latvia University of Agriculture (LUA) in the electric drive laboratory the experimental tests were performed on a 1.1 kW totally enclosed fan cooled three phase induction motor with a fan mounted on a shaft for fan cooled conditions and with a fan taken off for naturally cooled conditions. The transient temperatures are measured in nine points of the stator end windings and in two points of the stator frame using thermocouples. Temperature is measured by using K type thermocouples and Pico-Log TC – 08 data logger. The current and voltage are measured by using Simple Logger II L562 two channel data logger. Measurement data are processed and archived using data loggers Pico-Log Recorder, Simple Logger II and Data View software. The experimental test results show that ventilation plays an essential role in the heating process of small power induction motors. Mathematical and virtual models of induction motor windings heating are represented to simulate the heating process of induction motor under no-load mode and different cooling conditions.

The objective of precision beekeeping is to minimize resource consumption and maximize productivity of bees. This is achieved by detecting and predicting beehive states by monitoring apiary and beehive related parameters like temperature, weight, humidity, noise, vibrations, air pollution, wind, precipitation, etc. These parameters are collected as a raw input data by use of multiple different sensory devices, and are often imperfect and require creation of correlation between time data series. Currently, most researches focus on monitoring and processing each parameter separately, whereas combination of multiple parameters produces information that is more sophisticated. Raw input data sets that complement one another could be pre-processed by applying data fusion methods to achieve understanding about global research subject. There are multiple data fusion methods and classification models, distinguished by raw input data type or device usage, whereas sensor related data fusion is called sensor fusion. This paper analyses existing data fusion methods and process in order to identify data fusion challenges and correlate them with precision beekeeping objectives. The research was conducted over a period of 5 months, starting from October, 2019 and was based on analysis and synthesis of scientific literature. The conclusion was made that requirement of data fusion appliance in precision beekeeping is determined by a global research objective, whereas input data introduces main challenges of data and sensor fusion, as its attributes correlate with potential result.
