Potentials of ion exchange in water treatment for food industry
2002
Klasnja, M.T. (Tehnoloski fakultet, Novi Sad (Serbia and Montenegro))
Current use of ion exchange unit process in water treatment for food industry is mainly for boiler feed water softening. However, potentials of ion exchange in water treatment process are of greater significance, which is exactly the matter researched in this paper. After a short review of ion exchange unit process basics, and ion exchangers as an equipment (in scope of that, a suggestions for investitor about techno-econommic analysis of offered solutions for ion exchanger line design is given, in order to minimize errors in plan and design, which might be harmful for investitor), options of using ion exchange in some phases of water treatment process for food industry are discussed, like removing of: mineral matter (softening, decarbonization, demineralization), natural organic matter, and some other constituents (nitrate, ammonia, heavy metals).

In this paper we have shown that one of the most important characteristic of a packaging is protection of the wrapped product from the influences of the outer. A special emphasis has been put on the analysis of the importance of a packaging in the preventing steam and oxygen harm the product itself.

The lack of water on a global level has a direct impact on the development of agriculture and food industry, which is directly reflected in the in the increase of food production. The fact that water is a limiting factor in the production of food and the knowledge that a large number of people dying of starvation, indicating the importance of water in food industry. In addition to the food industry, pharmaceutical industry is also directly related to human health. Both of these industries not only consume large amounts of water but also have specific requirements in terms of the quality and water conditioning. Due to the high level of quality, these waters are subject to special statutory supervision, in which chemicals are without certificates FDA (Food and Drug Administration) should not be added to the water, whether it is a water treatment or conditioning. Requests of this kind often cause problems and limit the development of the food and pharmaceutical industries.

In this research microbiological status of water from three wells in a particular food factory was investigated. In raw water samples total number of aerobic mesophilic bacteria was determined with two methods - standardized and Petrifilm method which is in Serbia still an alternative method. Number of population of aerobic psychotrophic bacteria was also tested. ATP level was also analyzed. For classical microbiological method and quick method of evaluation of microbiological status correlation was reseached. Results show that coefficient of correlation was higher than 0.99 for the two applied methods. In most water samples the higher number of bacteria formed colonies when Petrifilm method was used. Connection between number of bacteria and level of total and free ATP is not statistically significant, while connection with variation of these values can be described as high direct linear correlation.

The mongraph presents the development and validation of kinetic methods for analysis of quantitative determination of the content of pesticides on the basis of their inhibitory influence in the chosen indicatory reactions. Spectrophotometry procedure allowed observing the speed of chemical reactions at wave length of maximum absorption of the obtained transitory complex metal ion-pesticide-substrate. Detecting the effect of pesticides on the speed of chosen indicatory reactions, allowed presuming the possible mechanism of their effect by building triple complex due to bonding of the metal ion to free electrons of donor atoms in the pesticide molecule. The mongraph explains the inhibitory effect of pesticides expressed by decrease of catalytic activity of the catalyst, due to the fact that depending on both the stability of the formed triple complex and strength of the bond between the donor pesticide atom and metal ion, much more energy is needed for such complex to decompose, which leads to decrease of the speed of indicatory reaction. During the elaboration of kinetic methods, we observed the effect of reaction parameters on the speed o indicatory reactions, the aim of which was to choose the optimal experimental conditions for determination of pesticides. In a part of the mathod elaboration, we tested the effect of pH values in reacction environment, the concentration of indicatory substances and the catalyst on the speed of chosen indicatory reactions. We constructed the calibration curves for determining the pesticides and tested the accuracy and precision of the proposed kinetic methods. We also tested the effect of interference on the speed of inhibitory reactions. The work also icluded defining limits for detection and limits for determination of the tested pesticides. The elaborated kinetic methods were applied for determining pesticides in food and water samples. The food and water samples required a complex preparation due to the presence of numerous substances that had an effect on determining the pesticides by applying these methods. The present distracting substances in the samples were removed by applying extraction methods, which at the same time increased the selectivity of kinetic methods. Validation of the proposed kinetic methods was performed by comparing the obtained results with the results obtained by the reerent HPLC method.
