Defoliation of one-year old shoots of peach Rakoniewicka cv. was carried out at the end of August. It caused a decrease in the resistance to low temperatures in autumn when the trees prepared for winter. At the same time a decrease in dry matter content, in total nitrogen and protein levels, and quantitative changes in the composition of aminoacids in protein hydrolysates of defoliated shoots were observed.
