It appeared that feeding the fatteners vinasse caused a decrease in dressing percentage or in meatness and meat quality and so loss in weight during cooling was affected. Meat of fatteners fed with vinasse enriched with protein and of higher dry matter content obtained higher scores in the organoleptic evaluation
