[Qualitative estimation of meat of black and white and charolais x black and white steers]

Chemical composition and organoleptic properties of meat of Black and White and Charolais x Black (Ch X BW) steers were studied. Fat content was 3,66% higher in crossbred steers at 18 mo. of age, but moisture content was 3,05% less than in purebreds. Biological value of protein of crossbreds was higher as well (4,32 vs. 4,41%)
