In the paper a review of physiologically advantageous effects of slowly or less digested starch, passing the human gastrointestinal tract, is given. Some analytical methods for quantifying the availability of starch are described in details. Suitability, handiness and reliability of in vitro and in vivo techniques for evaluating the resistant starch content and the rate of starch hydrolysis are discussed.
