Abstract: A teacher's guide provides curriculum information for a practical continuing education course on sanitation and safety for school food service personnel. The curriculum provides sessions on sanitation procedures (3 lessons, covering bacteria and foodborne disease, and sanitary practices in food handling and housekeeping) and safety aspects of a school foodservice. Nine handout masters, a pre-test, and a reference bibliography are included. (wz).
