Macronutrient substitutes (protein-based agents, carbohydrate-based agents, non-nutritive sweeteners and bulking agents) allow for the reduction of the caloric content of certain foods. The safety evaluation of these substances poses special problems for toxicologists due to their unique nature and high intake level. Guidelines for the safety evaluation of macronutrient substitutes are presented in this article.
