The measurement of A(, w) can supply useful information as to the chemical and biological stability of food products. In this review the following subjects are treated: (a) mathematical equation suggested in literature to describe water sorption isotherms of food systems. (b) A(, w) of systems with high and low water content. (c) A(, w) prevision in I.M.F. (d) Effect of A(, w) on degradative reactions. | La misura dell'attivita dell'acqua (A(, w)) e in grado di fornire utili indicazioni sulla stabilita chimica e biologica dei prodotti alimentari. Dopo aver definito i concetti di A(, w) e di isoterma di adsorbimento vengono sinteticamente trattati i seguenti aspetti: (a) Espressioni matematiche proposte in letteratura per descrivere le isoterme di adsorbimento dei sistemi alimentari. (b) A(, w) dei sistemi ad alto e basso contenuto in acqua. (c) Previsione dell'A(, w) dei sistemi ad umidita intermedia. (d) Influenza dell'A(, w) sulle principali reazioni degradative.
