Technological quality of milk from South Bulgarian Coriedale and North Caucassian sheep in the production of white brine cheese

The results of the investigation show that milk from both breeds proved to be a good raw material for cheese production.The sheep of the South Bulgarian Corriedale have milk of incrreased values of the basic components, as compared to North Caucasian breed.
