Quality of canned food made of meat with DFD characteristics | Качество консервов, выработанных из мяса с признаками DFD

English. The possibility of using meat with DFD characteristics for production of canned food of "Stewed meat" type is studied. In the manufacture of the canned food block beef with DFD defect was used with addition of the multifunctional additives Premix-33 and Premix-33C, as well as soy protein concentrate PROHAM into the formulation. Sterilization formula of test canned food was 20-55-20/120 deg C. The control samples were sterilized according to the formula 20-90-20/115 deg C. In the control and test samples of canned food the general chemical, amino acid compositions and digestibility of protein were determined in vitro according to conventional methods. It is found that the protein content in test samples of canned food is 2.5% lower as compared to canned NOR meat and that of fat, ashes and carbohydrates – higher by 3%; 1.2% and 1.2% respectively. The ratio protein : fat in the control sample of canned food is 1:0.6, when in the canned meat with DFD characteristics – 1:0.96, which is much closer to the normative index (1:1.2), guaranteeing high nutritional value of the product. The calculated energy value of the test samples of canned food is 25 kcal/100 g higher than that of the control one due to the introduction of 6.2–6.3% of beef slaughter fat in the formulation. The studies of amino acid composition indicate approximately the same biological value of canned NOR and DFD meat. The results of in vitro research of digestibility of protein of canned NOR and DFD meat showed that the overall digestibility of protein of canned meat with DFD characteristics by pepsin and trypsin was 5.4% higher than that of NOR meat. Canned food made from meat with DFD defects according to the proposed technology, have a more balanced chemical and amino acid composition and better digestibility by proteolytic enzymes compared to canned food made from NOR meat.

Russian. Исследована возможность использования мяса с признаками DFD для производства консервов типа "Мясо тушеное". При выработке консервов использовали блочную говядину с пороком DFD с добавлением в рецептуру многофункциональных добавок Премикс-33 и Премикс-33С, а также белка соевого концентрированного PROHAM. Формула стерилизации опытных консервов составляла 20-55-20/120 град С. Контрольную партию стерилизовали по формуле 20-90-20/115 град С. В контрольных и опытных образцах консервов определяли общий химический, аминокислотный составы и переваримость белков in vitro по общепринятым методам. Установлено, что содержание белка в опытных образцах консервов на 2,5% ниже по сравнению с консервами из NOR мяса, а жира, золы и углеводов – выше на 3%; 1,2% и 1,2% соответственно. Соотношение белок : жир в контрольном образце консервов составляет 1:0,6, тогда как в консервах из мяса с признаками DFD – 1:0,96, что значительно ближе к нормативному показателю (1:1,2), гарантирующему высокую пищевую ценность продукта. Расчетная энергетическая ценность опытных образцов консервов на 25 ккал/100 г выше, чем контрольного образца за счет введения в рецептуру 6,2–6,3% говяжьего жира-сырца. Исследования аминокислотного состава свидетельствуют о приблизительно одинаковой биологической ценности консервов из NOR и DFD мяса. Результаты исследований по переваримости белков консервов из NOR и DFD мяса in vitro показывают, что общая переваримость пепсином и трипсином белков консервированного мяса с признаками DFD на 5,4% выше, чем мяса NOR. Консервы, выработанные из мяса с пороками DFD по предложенной технологии, имеют более сбалансированный химический и аминокислотный состав, а также лучшую переваримость протеолитическими ферментами по сравнению с консервами, выработанными из мяса NOR.
